Vegan Substitutions

For Baking

  • Butter: Vegan margarine, like Earth Balance
  • Buttermilk: Mix 1 cup soymilk with 1 teaspoon apple cider vinegar or lemon juice
  • Condensed Milk: Canned coconut milk, or try this recipe.
  • Eggs: Per egg: 1/2 mashed ripe banana, 1/3 c applesauce, 1/4 c soy yogurt, 1/4 c blended sliken tofu, 1 T flax seeds mixed with 3 T water
  • Egg whites: agar agar powder mixed with water
  • Heavy Cream: Top creamy layer of full-fat coconut milk, or try this recipe.
  • Honey: Agave or maple syrup
  • Sugar: Vegan sugar, beet sugar, date sugar, agave, maple syrup, turbinado sugar, brown rice syrup


  • Parmesan: nutritional yeast, or nutritional yeast ground with raw cashews
