This soup is ridiculously simple to make, and is delicious, comforting, and healthy. Red lentils are wonderful to use for quick soups because they’re cooked through in a matter of minutes.

Of course, you’re welcome to use homemade vegetable broth and hand-diced tomatoes, but in the interest of convenience and speed, I’ve used packaged versions of these ingredients.

Red Lentil Soup

Ingredients

  • 2 T olive oil
  • 1 c diced onion
  • 32 oz vegetable broth
  • 4 c water
  • 1 can diced tomatoes
  • 2 c dry red lentils
  • Juice of 1/2 lemon
  • Salt & Pepper to taste

Directions

  1. Saute onion in olive oil in a large stockpot, until translucent.
  2. Add veggie broth, water, and diced tomatoes. Bring to a boil.
  3. Add lentils, bring back to a boil, then lower to a simmer.
  4. Simmer for about 20 minutes, until lentils are soft and broken down a bit.
  5. Add the lemon juice, and salt and pepper to taste.
